Simple yet delicious, this recipe is great for beginners in the kitchen who want to get a bit more creative.
Ingredients
- 1kg Boneless, Skinless Chicken Breasts
- 2 tbsp Extra-Virgin Olive Oil
- Optional: Flat Bread, Cucumber, Lemon, Red onion
- 1/4 cup whole milk
- 1/4 cup plain Greek yogurt
- 1/2 fresh lemon, juiced
- 1 tsp coriander
- 1 tsp cumin
- 1/2 tsp pepper
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1 tsp garlic powder
Yogurt Sauce
- 200g greek yogurt
- 100g mint, chopped
- 1 garlic clove, chopped
- 1 tbsp lemon juice
- 1/4 tsp cumin
- salt and pepper to taste
Directions
- Slice the chicken, pound it into cutlets and season with salt.
- Combine marinade in a bowl and add chicken. Mix and allow to sit for 30 minutes.
- Combine ingredients for Yogurt Sauce and mix well. Season with salt and pepper to taste.
- Heat up an Anolon X Skillet over high heat with oil.
- Add chicken to the pan and lower heat to medium. Cook for 3-4 minutes until chicken is cooked all the way through.
- Remove the chicken from the pan and leave it to rest. The chicken is fully cooked when the juices run clear.
- Slice and serve over cooked rice with the yogurt sauce
- Optional: add flat bread, lemon or cucumber on the side. Try browning a red onion for some extra zing!
