Veggie Omelette Quesadilla

If you're looking for a simple but delicious breakfast, Caitlin Rule from @goodnessavenue has a great recipe for you.

Serves 1


  • 2 eggs
  • 1/4 cup chopped capsicum/red peppers
  • 1 tbsp diced red onion
  • 1/3 cup chopped broccoli
  • Salt + pepper
  • Grated cheddar cheese
  • 1 flour tortilla
  • 1/4 chopped avocado
  • 3 cherry tomatoes, sliced
  • Handful of spinach


  1. Whisk eggs, veggies, salt + pepper.
  2. Heat your pan over a medium heat. sprinkle over the cheese and fry for a few seconds.
  3. Add the egg mixture then top with a tortilla and press down.
  4. Once eggs are cooked flip it over and fill with the avocado, tomatoes and spinach on one side. Fold in half and remove.
