If you're looking for a simple but delicious breakfast, Caitlin Rule from @goodnessavenue has a great recipe for you.
Serves 1
Ingredients
- 2 eggs
- 1/4 cup chopped capsicum/red peppers
- 1 tbsp diced red onion
- 1/3 cup chopped broccoli
- Salt + pepper
- Grated cheddar cheese
- 1 flour tortilla
- 1/4 chopped avocado
- 3 cherry tomatoes, sliced
- Handful of spinach
Directions
- Whisk eggs, veggies, salt + pepper.
- Heat your pan over a medium heat. sprinkle over the cheese and fry for a few seconds.
- Add the egg mixture then top with a tortilla and press down.
- Once eggs are cooked flip it over and fill with the avocado, tomatoes and spinach on one side. Fold in half and remove.
